A Costco Purchase I Love!

I have to brag about these shirts from 32 degrees. They are so warm! I purchased them from Costco. I bought the women’s and the men’s but the one I’m wearing now in this picture is the men’s.

The women’s shirts has a scooped neck line. They come in black, white, and the grey that I’m wearing. You can get matching pants as well that are also warm and cozy. I love those too. But I have to rave on these shirts. They are super soft and hug you like a blanket and keep you at the perfect temperature. I don’t like to be to hot. Costco has these at a great deal right now for 6.99 each for the pants and the shirt, until the 26th of November. This price is for the men’s and women’s.

They are going fast. Every time I go in there I buy more and they have a whole pallet missing. So people are loving them. They have kids sizes too. If you want to keep your little ones warm this is the perfect solution underneath their clothes. I have worn mine under my clothes already and their was no bunching up anywhere. It hugs you perfectly. I love this product!!🥰

Missing Man Table

I walked into an establishment and this is what I saw. I wondered what it meant? So this is what the sign read….

If you enter a room, you may have noticed a special table; it is reserved to honor our missing…

The empty chair represents Americans who were or are missing from each of the services- Army, Marine Corps, Navy, Air Force, and Coast Guard – and civilians, all with us in spirit.

Some here were very young, or not yet born, when the Vietnam War began; however, all Americans should never forget the brave men and women who answered our nation’s call and served the cause of freedom in a special way.

Let me explain the meaning of this table, and then join me for a moment of silent prayer.

The table is round-to show our everlasting concern.

The cloth is white-symbolizes the purity of their motives when answering the call to serve.

The single red rose reminds us of the lives of these Americans….and their loved ones and friends who keep the faith, while seeking answers.

The yellow ribbon symbolizes our continued uncertainty, hope for their return and determination to account for them.

A slice of lemon reminds us of their bitter fate, captured and missing in a foreign land.

A pinch of salt symbolizes the tears of our missing and their families -who long for answers after decades of uncertainty.

The lighted candle reflects our hope for their return – alive or dead.

The Bible represents the strength gained through faith to sustain us and those lost from our country, founded as one nation under God.

The glass is inverted – to symbolizes their inability to share a toast.

Let us now have a moment of silence to pay tribute and honor to all American Heroes that are with us still and the ones that lost their lives for us, and to thank their families.

Crunchwrap Supreme

This is a easy and delicious crunch wrap that the whole family will love. I’m not much of a taco eater but I do like this one. It has enough crunch and flavor that your family will want for every taco Tuesday! 😋

* 1 lb ground meat
* 1 packet taco seasoning mix
* 6 burrito size flour tortillas
* 6 tostada shells
* 1 cup of sour cream
* 2 cups of shredded lettuce
* 1 diced tomato
* 1 cup shredded Mexican cheese blend
* Nacho Cheese

1. In a skillet or large cooking pan, cook and crumble the ground beef over medium-high heat. When it is no longer pink, drain the grease.
2. Place meat back into the pan and stir the taco seasoning mix as well as the water it calls for on the packet. Cook according to the package instructions.
3. Warm up the nacho cheese sauce in the microwave and set aside.
4. Place the flour tortillas on a plate and warm in the microwave for about 20 seconds.
5. Lay one tortilla on a flat surface. Spread a couple of tablespoons of nacho cheese in the middle of the tortilla.
6. Place ½ cup of taco meat on top of the nacho cheese.
7. Next, add the tostada shell, a thin layer of sour cream, lettuce, tomato, and lastly, the shredded Mexican cheese.

8. To fold into the actual crunchwrap, start with the bottom of the tortilla and fold the edge up to the center of the fillings. Keep doing that, folding as tight as possible, as you work your way around the tortilla.
9. Spray another skillet or cooking pan with cooking spray and heat over medium heat. Place the crunchwrap supreme, seam-side down, onto the skillet. Cook for 2-3 min., or until golden brown.
10. Flip over and cook the other side for another 2-3 min or until golden brown.
11. Cook the rest of your crunchwraps and eat immediately.

Epilepsy Awareness Month

November is Epilepsy awareness month and I am a fighter of this disease. I don’t look like I’m sick, I look like I’m healthy and fine. I have had this disease for 5 years now and I found out I had it on a fluke. One day I had to pick up my husband from the airport, a trip I have taken hundreds of times. As I was driving I get a call from my husband and he asked me what was taking me so long. I said I didn’t know, but this drive seemed like it was taken longer then usual and nothing is looking familiar to me. So my husband decided to look on find my iPhone to check to see where I was and noticed I was 15 miles away from the airport. I completely drove past my off ramp. How could I do this? I drove this route 4 times a week? What was going on? This was the beginning of my brain telling me that you better get it checked out, because this has happen to me more than once. In my case I was not born with this like most people with this disease. I was hit by a car as a young child and was told by my neurologist that I sustained brain damage from that accident. As an adult this is the result of the accident. Thank goodness I did not have a seizure yet to know that one was coming and to alert me that I had this horrible disease. I had no idea how much my life would change. I’m grateful I did not have to spend my whole childhood with this disease and that I am dealing with it now. I’m angry that I have it, I’m sure I would have been twice as angry as a child. But I’m dealing with it the best that I can with what I have. There are good days and bad and I try to always stay positive. If you know someone with Epilepsy, do your research on the disease and what type they have, be supportive, because they need you for those bad days and those good days!😋

If you want to support Epilepsy awareness you can do so by clicking the link below:

Fall Fashion

Sometimes we need to be cozy and comfortable when we are out and about, yet still looking good and fashionable. It’s getting colder but not cold enough for a jacket. This adorable sweatshirt is super soft and it’s so comfortable. It’s the perfect sweatshirt if you are shopping and running in and out of stores and don’t want the cumbersome of a jacket. It’s a super cute look with a scarf and hat for that early morning chill, that can be ditched when it starts to warm up a little. You can even replace the sneakers with some cute boots if you would like. Make the look about you! If you look good you will feel good. You don’t ever have to spend a lot to look good. You will here me say this often because I believe this wholeheartedly.

I Love My Planner

I’m a huge planner. I write everything down. I know everybody says to me “You have a phone you can use it to add everything you need into your calendar”. Yes, I can. But, so many times technology does not work and I have lost everything and I just can’t take that chance and I just don’t use the cloud. I am also a huge crafter so this gives me a chance to decorate something when I don’t have time to do big projects. There are so many different planners to choose from. Just to name a few; Webster, Kate Spade, Filofax, Kikki.K and I could go on forever. But the one I love is Erin Condren. I have been using this style of planner for many years. I have used a few of the ones I mentioned above, but Erin Condren is my favorite. You can change the color of the coil, the styles, and they all come with beautiful quotes. At the back of the planner you will find a bunch of stickers to help you plan your days. You can pick either Vertical, Horizontal or Hourly styles. What’s even better is you can change the covers of your planners to match your seasons and have them personalized. I absolutely love this planner and I can’t say enough about it. For this week I quickly decorated it for Halloween with washi. Another one of my weaknesses is washi, but that’s for another day along with my pens! I have not added all my details for the week except for one. I so enjoy planning, I have always been a planner. Anyone who knows me knows I always plan ahead. Check out Erin Condren’s website, you won’t be sorry! In another post for another day I will go more into detail about my specific planner features.

Sweet and Spicy Bacon Wrapped Chicken Tenders

Nothing tastes greater then chicken and bacon together. What tastes even better is chicken and bacon with a sweet coating on it. OH YUM!! This dish is super easy and fast to make and tastes delicious. The only catch is, to make sure you do not over cook the chicken. If you do, it will come out dry. If you cook it to the directions it will be perfect. I also made these yummy Brown Butter Honey Garlic Carrots. These are awesome and so sweet. These two paired together were a hit in my home. I did not make enough. This was a easy and a fast meal to make that was delicious. I hope you like them as much as everyone in my house did. Enjoy 😉

Sweet and Spicy Bacon Wrapped Chicken Tenders

* 1-1/2 pounds chicken tenders (about 10 chicken tenders)
* 10 slices bacon
* 2/3 cup firmly packed brown sugar
* 1 Tbsp chili powder

* Preheat oven to 375 degrees. Line a rimmed baking sheet with foil and top with cooking rack.
* In a shallow dish, combine brown sugar and chili powder.
* Wrap each chicken tender with one slice of bacon. Coat bacon wrapped chicken tenders with the brown sugar and chili powder mixture. Place on baking sheet.
* Bake for 20 to 25 minutes, until bacon is crisp.

* 2 pounds large carrots, cut into 2 inch pieces (baby carrots will also work)
* ½ cup butter
* 3 Tablespoons honey
* 2 garlic cloves, chopped
* salt and pepper
* parsley, chopped for garnish

1. Preheat oven to 425 degrees. In a medium saucepan add the butter and cook over medium high heat. Continue to whisk for a few minutes until the butter starts to become frothy and brown. Add the honey and garlic and remove from heat.
2. In a large bowl add the carrots and drizzle the sauce on top. Toss until coated and spread evenly on a large baking sheet. Season with salt and pepper.
3. Bake for 15-20 minutes or until carrots are tender. (see note) Transfer to a serving dish and garnish with parsley. Serve immediately.

** I like to cover with foil for the first 10 minutes and then remove and let roast and brown for the last 10 minutes.

Are Youu Done Decorating For Fall?

I hope your done with all your fall decorations. I know I am done with as little as I have done this year. Since my son was in a serious motorcycle accident, all my attention is on him and getting him to his appointments and well. So I was able to decorate a little. I love this season and I do usually go all out. In my neighborhood my neighbors will have Christmas lights out by now. It’s CRAZY!! I was coming home from the store the evening on October 1st and I looked down the street and some houses were completely lined with Christmas lights. I was shocked. My neighborhood is always lit up like a beautiful village at Christmas. I’m excited to share it with you come December.

It’s all about the sweater weather

I’m just loving this weather. It’s finally starting to cool down here in Texas and I could not be happier. The heat was killing me, not to mention the humidity. I want to break out all my cozy sweaters and cute boots and clothes. I look forward to this time of year so much. I love the change of the leaves and the crisp cool air. Perfect jogging weather. So break out those warm sweats because it’s time to get comfy and sit by a fire with a nice warm drink.
Sweater and jeans are both from Nordstroms. Backpack purse is Tory Burch, Belt is Ferragamo

This was a great dish. The presentation is also perfect if you are having guests and want to impress them. Usually this dish is just the Teriyaki Chicken and nothing added to it. But I added other things to the chicken. I wanted a bit more flavor. You can add what ever you would like to your chicken and it would be great. Remember this recipe is for a serving for 2. So if you need it for more you will need to double it accordingly. Enjoy 😉.

Serves 2

* 1 pineapple
* 1 cup water
* ½ teaspoon kosher salt
* ¼ teaspoon chili flakes
* 1 tablespoon unsalted butter
* 1 teaspoon sugar
* 1 cup white rice, rinsed
* 2 cloves garlic, minced
* ¼ cup soy sauce
* ¼ cup honey
* 3 tablespoons rice vinegar
* ½ teaspoon ground ginger
* 1-½ lb. chicken thighs, 1-inch dice
* 2 teaspoon olive oil
* 2 teaspoons sesame seeds
Optional- I added slices of carrots and red bell peppers. You will have to cook them first to soften them up before adding them.

1. Cut the pineapple in half lengthwise. Scoop out and reserve the middle of each half, leaving ½-inch to ¾-inch of flesh along the edges.
2. Finely chop the reserved pineapple. Combine the chopped pineapple with any juices released and place approximately 1 cup of it in a small saucepan.
3. Add the water, salt, chili flakes, butter and sugar to the saucepan, and bring to a boil over medium-high heat.
4. Add the rinsed white rice. Bring to a simmer, then reduce heat to low and cook for 15 minutes, or until the rice is fully cooked. Once done, fluff with a fork.
5. While the rice is cooking, combine the garlic, soy sauce, honey, rice vinegar, and ginger in a small bowl. Add the sauce to the chopped chicken and let sit while your pan heats up.
6. Heat the olive oil in a large sauté pan over medium-high heat.
7. Use a slotted spoon and drain the chicken from the teriyaki sauce, reserving the sauce. Add the chicken to the hot pan and brown on all sides.
8. When the chicken is fully cooked, (this is when you would add your optional items as well after you have cooked them) add the reserved sauce to the pan and cook until the sauce has reduced and thickened. The sauce should evenly coat the chicken. Sprinkle with sesame seeds.
9. To serve, spoon about ½ cup of the pineapple rice into one half of each hollowed-out pineapple boat. Fill the remaining half with the teriyaki chicken. Garnish with cilantro, if desired.

Missing My Child

Missing your children can be so heart wrenching for a parent. I know at least for me it is. My daughter Ashley is 25 and lives in San Diego, which is where I moved from. I think about her 24/7. Is she safe, is the person she is with treating her with dignity and respect, is she surviving this expensive state without me. All these crazy things go through my head all the time. I know she is an adult. She is super smart, and intelligent. She knows her place in the world and I have no doubt that she will do great things with her life. But that does not stop me from caring and being her mom. While my kids were growing up I was always involved in my children’s schooling. I volunteered for everything under the sun. I wanted to be a part of this time because I knew they would grow up fast, and I would not have that time to be around them once they got into high school and they would not want mom there anymore. Why? This is the time where they are finding themselves. You have to give them space (within reason of course) and let them blossom. Im so glad I did this. I encourage everyone to participate in your child’s education. It’s so very important. For them and you! This picture was taken last year when my daughter was here in Texas and we went to a craft fair. I sure do miss my beautiful daughter. I have 2 other boys, Mateo is turning 20 in 31 days and Marco will be 18 in February. I hope they don’t move too far away, I think it would crush me.

Decorating My Mixer

I love to decorate things around my house. It’s something I’ve always loved to do. Since Halloween is coming up I thought I would decorate my mixer. I love sugar skulls and I came across these at Zulily. They are super cute and so colorful. They are made of vinyl and easy to remove. They wipe clean and won’t remove with cleaning. Zulily does not always carry them but if you sign up below and type in AZ vinyl works, you can be added to there notifiers list when they come back to Zulily. They have them for refrigerator and different appliances as well. They have so many different styles to choose from. You will love them and so easy to apply.

Yummy Pasta Dish

This is a great dish that is quick and does not take much time and it is so yummy. My husband hates Brussels Sprouts but he likes this dish. Believe it or not my kids love this dish as well, it has veggies in it that they would NEVER TOUCH! But let’s not tell them that. I hope you love it as well.

Angel Hair with Bacon, Brussels Sprouts, and Mushrooms.

Olive Oil; for drizzling

1/2 cup Parmesan Cheese, grated

1 box Angel Hair Pasta

1 package of bacon: cooked and chopped into pieces

2 cups Bussel Sprouts; cut thinly

2 cups of Mushrooms; sliced

2 spring of Rosemary

*Rotisserie Chicken (optional) see below

Place a large pot of salted water over high heat and bring it to a boil

Place a large sauté pan over medium high heat. When the pan is hot, add Bacon and drizzle with Olive Oil and toss in the Rosemary. Cook, stirring occasionally until the Bacon begins to get crispy in the meantime, cook your Pasta. Stirring Occasionally for 3 minutes.

When the Bacon is crisp, add the Mushrooms with a pinch of Salt and some Fresh Ground Black Pepper. Cook for another minute then add Brussels Sprouts. Next add Rosemary. (*If you wanted to add cooked chicken this is when you would do it, see below) Drain your Pasta and combine everything and finish with a pinch of Salt and some freshly ground Pepper, the Parmesan cheese and a drizzle of Olive Oil.

*You can add cooked rotisserie chicken chopped up into small pieces to this meal. I do this all the time and it taste great. I don’t add much just about 2 cups.

It’s still SUMMER weather here!

Even though it may be cold where you are, it is still very warm in Texas. We are still in the mid 80’s. This brings me to this fashion picture today. I am in love with these sandals from Sam Adelman. You can wear these with shorts or jeans and you would look super cute! The Rattan bag is from Bohobags.com they have some adorable bags and I had a tough time picking. The matching earrings to the sandals are from Halogen, which you can find at Nordstroms. This little ensemble would look great on you.

Adidas shoes

I have to say these are the most comfortable workout shoes I have warn in a long time. They give me so much room but are snug and hug my foot. I never have any calf problems like I did with other shoes after running. These are Adidas Pureboost X Clima Sneaker. They are under 60.00. I don’t think there are many sizes left but you can find them at other places I’m sure. I just purchased them here.

Craft Room

I have been working on my new craft room. We bought a house not too long ago and I’m just now getting around to it. I’m a huge crafter. If it involves making something with your hands, I’m all over it! Anyways, I’m on the fence about cabinets for my room. I need lots of storage because I have lots of machines and I need them to have sliding drawers. I need tons of paper storage because I have TONS of that. I have picked the color of my room (above) and I purchased my chandelier (also above) from Pottery Barn. I just can’t seem to get it together for the rest. If anyone has any good ideas to where I should go, or has seen some really cute ones, please send me a message on my contact page. I would love to hear your thoughts. I have tried Lowe’s and IKEA and not to thrilled with what they have. I would even order from some place if it’s super cute, good quality, and has great ratings.

Halloween pondering

Just relaxing this very warm Sunday. So I decided to look through this Halloween magazine to get ideas on decorating for this up coming season. I love decorating outside. This magazine has some great ideas. I usually don’t buy this magazine but it caught my eye at the grocery store. So I picked it up and started paging through it and saw it had some cute ideas. If you see it in the stores take a look at it. Super cute!

Sausage & Pepperoni Stromboli

My husband is Italian, so he likes to eat pasta and sauce and of course cheese. Basically anything Italian as much as possible. So this was an easy and quick meal for me to make since I was so busy today and it was getting late, I thought why not Stromboli? My kids love it and it’s really good. I got it from a southern soul and the link is below. Enjoy!

1 ball or roll of pizza dough (homemade is great but I used store-bought)

1 lb Italian sausage

1 cup shredded mozzarella cheese

1 package sliced pepperoni

2 cups pizza sauce

1 cup shredded Parmesan cheese

1 egg

• Cook Italian sausage in a medium skillet until browned.  Drain on paper towels and crumble into small pieces.

• Heat oven to 450 degrees.

• Place parchment paper on a baking pan and lightly flour.  Roll dough out to form a large rectangle.

• Brush a thin layer of pizza sauce on dough.  Layer on crumbled sausage then mozzarella cheese.

• Place pepperoni slices on top of cheese then sprinkle with 3/4 cup Parmesan cheese.

• Gently roll in short sides of dough to form a seal around filling.

• Starting on long side of dough, carefully roll into one third of Stromboli.  Using parchment, roll dough again until reaching opposite end.  Pinch together and place seam side down.

• Mix egg with 1 tablespoon of water.  Brush egg mixture over Stromboli and sprinkle with remaining 1/4 Parmesan cheese.

• Place in oven and IMMEDIATELY TURN OVEN DOWN to 350 degrees.

• Bake for approximately 18 minutes.  Remove from oven and let rest for 10 minutes.

◦ Test center of turnover.  If dough is not completely cooked, slice Stromboli in half and bake for additional 5-8 minutes.

• Serve with warm pizza sauce

Chicken Pesto Roll-Ups

Oh my goodness I love this recipe. It was easy and yummy. I served with with red potatoes and a salad. It was perfect. Lots of flavor with the pesto inside. It calls for a slice of tomato inside, which you can do, but instead I used sun dried tomatoes in a jar (drained). I love sun dried tomatoes. I got this great recipe from Natasha’s Kitchen. I love her recipes. I will have her link at the bottom of the recipe. ENJOY 😆

Calories: 295 kcal

Servings: 8 chicken roll-ups

2 lbs chicken breasts (4 medium/. large chicken breasts)

1/4 tsp Black Pepper (or to taste)

1/2 cup Pesto sauce (about 8 Tbsp total)

8 oz Mozzarella cheese, shredded, (reserve 2 oz for topping)

2 tomatoes (medium) thinly sliced into 16 rings (I like to use 1 jar of Julian cut sun dried tomatoes for the inside (drained) but you can use which ever you prefer)

1 cup cherry tomatoes

1 Tbsp Fresh basil leaves shredded, optional garnish

1 Tbsp olive oil

1 Tbsp unsalted butter

1. Preheat oven to 425˚F. Cut chicken breast in half lengthwise so you have 8 thin chicken cutlets. Pound each cutlet in a quart sized ziploc bag or between 2 sheets of plastic wrap into 1/8″ thick cutlets. Season both sides of chicken with garlic salt and black pepper.

2. Spoon and spread 1 Tbsp pesto in the center of each cutlet, top with 2 thin tomato slices and sprinkle with 2-3 Tbsp mozzarella cheese. Roll the chicken up tightly and seal ends with a toothpick.

Place the skillet on the center rack of oven and bake 425˚F for 13-15 minutes (13 min for these these medium chicken breasts and 15 min for larger chicken breasts, or until internal temp of chicken reaches 160˚F on instant-read thermometer.

Being a mom is tough

It’s so very difficult when your children are hurting and you can’t take that hurt away. You feel so helpless and you wish you where in their place. My son had a motorcycle accident in June and ended up in the Burn ICU for a month and now he is having surgery on his broken hand. This journey has been painful and far from over. We just have to be strong for our children and remind them that there is a bright side to this story. I’m so very grateful my son is ALIVE!

Fall Fashion

img_7200-2I love this long sleeved pocket tee. It’s super soft and light weight and so very comfy. It comes in a few different colors from Nordstroms. I bought it in 3 different colors, I loved it so much.

I also have this army green button down jacket. It’s the perfect weight for any time of the season to add layers if your cold. A very versatile piece to add to your wardrobe. It comes in 2 different colors.

The jeans are Kut from the Kloth I always buy them from Nordstrom. One of my favorite brands you will notice.

My shoes I bought from Vicidolls.

Fall Fashion

Love my Adidas. They are some of the best work out shoes I wore in a long time. They are comfortable and have a lot of support. I found them at Nordstroms. They still have them in all sizes and they are on sale now for under $60.00. They also have them in white. They are the Pure Boost.

So excited for fall to arrive that I started to decorate early. In the copper bowls I have small apples and pumpkins with acorns. In the vases at the bottoms I have mini pumpkins and mini pine cones with the fall cattails springs that come in a bunch from Hobby Lobby.
